Receipe: Oaxacan Cheese-Stuffed Fajita Chicken w/ tomato chipotle potatoes|| Via Home Chef

Happy Friday loves!! I can not tell you how happy I am that the weekend is finally here. I had a very long and busy week. Good but long, so I am glad this week is coming to an end. Today I wanted to share another BOMB.COM receipe from Home Chef. I can not tell you how amazing and convenient this service is. Simple and easy to make, fresh meals delivered to your home every week, based on your diet preference and budget! I love how everything you need is also delivered in the box so all you have to do is prepare and cook!! The best thing is you can totally skip your meals any week that you need to so you are not obligated. Ive been using Home Chef meals now for about 6 months and it is such a lifesaver when I just dont have the time to go to the store and round up ingredients to make dinner and the food is soooo good! So lets get into this receipe shall we….


•1 Lime

•12 oz. Red Potatoes

•1 Shallot

•1 Red Bell Pepper

•1oz. Shredded Oaxacan Cheese

•1Tsp. Taco Seasoning

•1oz Tomato Chipotle Butter

•1oz. Sour Cream

*You will need: Olive Oil, cooking spray, medium non- stick pan, baking sheet, mixing bowl


Preheat oven to 400 degrees

Prepare a baking sheet with foil and cooking spray


#1 Prepare ingredients and make lime crema

-Quarter potatoes

-Stem, seed, remove ribs, and cut red bell pepper into thin strips.

-Zest and half lime. Juice one half and cut other half into wedges.

-Peel and halve shallot. Slice thinly.

-In a mixing bowl, combine sour cream, 1 tsp. lime zest, and 1 tsp. lime juice. Set aside.

#2 Start the potatoes

-Place potatoes on prepared baking sheet and toss with 1 tbsp. olive oil and 1/4 tsp. salt. Massage oil and seasoning into potatoes.

-Spread into a single layer and roast in hot oven, 20 minutes.

-While potatoes roast, cook filling.

#3 Cook the filling

-Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.

-Add red bell pepper and shallot to hot pan. Stir occasionally until tender and lightly charred. 8-12 minutes.

-Remove from burner.

#4 Prepare the chicken

-Pat the chicken dry

-Cover chicken with plastic wrap and use a heavy object to pound to an even 1/8” thickness. You may also use a gallon bag for easier clean up.

-Remove plastic wrap and season chicken on both sid3es with seasoning blend. Divide cheese evenly between chicken breasts and top with filling. Fold chicken over filling, enclosing completely.

#5 Finish potatoes and chicken and finish dish

-Carefully, push potatoes to one side of baking sheet and toss with tomato chipotle butter. Baking sheet will be hot! Use a utensil. Place stuffed chicken on empty side.

-Roast again until chicken reaches a minimum internal temperature of 165 degrees, 18-20 minutes.

-Rest roasted chicken, 3 minutes.

-Plate dish, topping chicken with lime crema. Squeeze lime wedges over chicken to taste. BON APPETIT!

Receipe: Steak with Tuscan corn sauté || via Home Chef

Its hump day already and I couldn’t be more excited for the weekend. Today I am sharing one of my home chef meals for this week. I wrote a full post on what home chef is Here. I have easily become someone who enjoys cooking because its soooo easy thanks to Home chef!

•1 oz Grated Parmesan

•4 garlic cloves

•.125 oz Oregy

•1 Ciabatta

•5oz. Corn Kennels

•1 oz Sour Cream

2oz. Baby spinach

You will need: Olive oil, salt, pepper, cooking spray, baking sheet, mixing bowel, medium non-stick pan


•Preheat oven to 400 degrees

•Prepare baking sheet with foil and cooking spray


#1 Prepare the ingredients

• Stem and coarsely chop oregano

•half ciabatta

•mince garlic

•oat steaks dry and season with 1/4 tsp. Salt and. Pinch of pepper

#2 make sauce and prepare ciabatta

•In a mixing bowl, combine sour cream, 1 tbsp. Parmesan (reserve remaining for corn sauté). Oregano 1 tsp. Olive oil, 1 tsp. of water, and a pinch of salt and pepper. Set aside.

•Place ciabatta halves on one side of prepared baking sheet, cut side up. Top evenly with half the garlic (reserve remaining for corn sauté) and 2 tsp. of olive oil

#3 cook the steaks

• place a medium nonstick pan over medium-high heat. Add 2 tsp. olive oil and steaks to hop pan. Sear until browned, 2 to 3 minutes per side.

• Transfer steaks to empty half of baking sheet. White pan clean and reserve.

•Bake in hot oven until steaks reach a minimum internal temperature of 145° and ciabatta is lightly browned, 5 to 7 minutes.

•Remove steaks to a plate and rest, 3 minutes. While steaks roast, make corn sauté.

#4 Make the corn sauté

• Return pan used to sear steaks to medium heat and add 1 tsp. Olive oil. Add corn to hot pan and stir occasionally until corn is lightly browned, 2 to 3 minutes.

•Add remaining garlic and spinach. Stir occasionally until spinach is wilted, 1 to 2 minutes.

•Remove from burner and stir in 1/4 tsp. Salt and a pinch of pepper.

#5 Place dish and garnish steak with sauce snd corn sauté with remaining Parmesan.

Super bowl Sunday: 4 oh so tasty yet quick & easy finger foods to make

Happy Friday friends!!! This weekend marks Super bowl 55 Sunday and all though I’m not the biggest football fan, I have to say that due to this worldwide pandemic and staying home more then usual. This Super Bowl Sunday event is literally the highlight of my week LOL!!!

Whether you are into football and will be watching personally or like me married to a man (need I say more) who LOOOOVES football 😂 Regardless one has to eat right?! So I put together 3 of my personal favorite dishes to make for such occasions as this. Now If you, like most people (trust me I’m more this person then I’d like to admit 🙈), just love a good ol’ pizza and wings already made and delivered to you Papa Johns has you covered! I N G R E D I E N T S:

•2 lb. chicken wings
•2 tbsp. Vegetable oil
•1 tsp. garlic powder

•Kosher salt

•Freshly ground black pepper

•1/4 c. hot sauce (such as Frank’s)
•2 tbsp. honey
•4 tbsp. butter

•Ranch dressing, for serving

•Carrot sticks, for serving

•Celery sticks, for serving

D I R E C T I O N S:

  1. Preheat oven to 400° and place a wire rack over a baking sheet. In a large bowl, toss chicken wings with oil and season with garlic powder, salt, and pepper. Transfer to prepared baking sheet.
  2. Bake until chicken is golden and skin is crispy, 50 to 60 minutes, flipping the wings halfway through. 
  3. In a small saucepan, whisk together hot sauce and honey. Bring to simmer then stir in butter. Cook until butter is melted and slightly reduced, about 2 minutes. Heat broiler on low. Transfer baked wings to a bowl and toss with buffalo sauce until completely coated. Return wings to rack and broil—watching carefully!—until sauce caramelizes, 3 minutes. Serve with ranch dressing and vegetables.

I N G R E D I E N T S:

5 tbsp. butter, divided
1 large onion, thinly sliced
2 sprigs, plus 1/4 teaspoon fresh thyme

Kosher salt

Freshly ground black pepper

12 slider buns, halved
1 lb. thinly sliced deli roast beef
12 slices provolone cheese
1/4 tsp. garlic powder
1 tbsp. clove garlic, minced
1 1/2 c. low-sodium beef broth
1 tbsp. Worcestershire sauce
D I R E C T I O N S:
  1. Preheat oven to 350°. In a large skillet over medium-high heat, melt 2 tablespoons butter. Add onion and thyme sprigs and season with salt and pepper. Cook, stirring occasionally, until caramelized, about 15 minutes. Discard thyme.
  2. Place bottom halves of slider buns on a large baking sheet and top with roast beef, provolone cheese, caramelized onions, and slider bun tops. 
  3. Melt 2 tablespoons butter and brush on top of buns. Sprinkle with garlic powder, coarse salt, and parsley and bake until cheese is melty and sliders are warmed through, 10 to 15 minutes. 
  4. Meanwhile, make au jus: Add remaining 1 tablespoon butter to same skillet and melt over medium heat. Add garlic and cook until fragrant, 1 minute, then add beef broth, Worcestershire, and thyme and season with salt and pepper. Simmer until slightly reduced, 10 minutes. 
  5. Serve sliders with au jus for dipping.

I N G R E D I E N T S:

10 slices bacon
1 oz. (8-oz.) block cream cheese, softened
1/3 c. mayonnaise
1/3 c. sour cream
1 tsp. garlic powder
1 tsp. paprika
1 lb. frozen chopped spinach, thawed and squeezed of excess liquid
1 c. freshly grated Parmesan
1 c. shredded mozzarella, divided
1 baguette, sliced and toasted
D I R E C T I O N S:
  1. Preheat oven to 350°. In a large nonstick skillet over medium heat, cook bacon until crispy, 8 minutes. Drain on a paper towel-lined plate, then chop. 
  2. In a large bowl, stir together cream cheese, mayonnaise, sour cream, garlic powder, and paprika and season with salt and pepper. Fold in chopped spinach, bacon, Parmesan, and 3/4 cup of mozzarella.
  3. Transfer dip to a baking dish and sprinkle with remaining 1/4 cup mozzarella. Bake until golden and bubbly, 25 to 30 minutes.
  4. Serve with crostini.

Pack of bacon

1 bundle of asparagus

Pinch of pepper to liking

D I R E C T I O N S:

1. Preheat oven to 350-400°

2. Wrap bacon around 2-3 spears of asparagus then place on a baking pan

3. Place pan in oven and let cook for about 20-25 min or until bacon is crisp

Hiii!! Happy Wednesday! Omg you guys!!! I’m really excited to talk to you guys about Home Chef today. First off, obvi we are in the middle of one of the biggest pandemics we have ever seen and most of us have been doing our part in staying home and keeping safe. However, Since restaurants have been ordered to close, if you’re like me and don’t like cooking and used to eating out at least 2-3 times a week this has been a bit difficult to say the least LOL! Now don’t get me wrong, take out is still nice and hubby and I absolutely love supporting our local restaurants. However it can be pretty pricey, a bit unsafe and when you get home and the food is cold…. well that is kind of annoying in my opinion.

The biggest reason I would have to say why I love home chef is because before this whole Corona virus, Hubby and I would have regular date nights at either our fave restaurant or at times different restaurants. Which is super easy as anyone would know, You go in, you order and your food comes out. When you are at home it’s more difficult to do that because you gotta choose what foods will pair with what, you gotta make sure you go buy everything, prep everything and then cook everything! By the time I do all that I am DONE! Lololol!!! With Home Chef, You don’t have to worry about anything other them picking the meals You want when you sign up. All the ingredients come packaged and ready for you. You just have to cook it & the meals are sooo delicious!! This is a major deal for me since I dislike cooking. Like seriously, I don’t know how I’ve managed to keep a man for 16 years and NOT cook on a regular basis LOL. But with Home Chef it makes it so much easier and enjoyable to do. I definitely see me cooking a ton more in my future 😜 I also love that you have an option to choose from based on your diet, so if you’re vegan, vegetarian, have any allergies of special dietary needs you can customize your meal plans accordingly. You can also skip a meal delivery based on your personal needs or customize how often you would like your meals to be delivered and I really really like that.

Another thing I noticed and really like is the portion control and the over all healthy choices you can choose from. This would easily be ideal for anyone who is trying to eat healthier and watch what they eat. I know we have all had to make an adjustment during this pandemic but with Home Chef it has definitely made our adjustment soooo much easier. I HIGHLY recommend!!
